You'd have a heart attack, that's what. The panel is completely unlabeled. "Ergonomic" doesn't come to mind. The later refit versions didn't improve on this much as evidenced when the genetically-superior intellect of Kahn failed to decipher the Lite-Brite:

It became much more functional-looking in "The Undiscovered Country," I'm sure to the delight of all serving aboard starships.

The LCARS panels were a nice twist. Stuart Baird had the right idea in making the readouts and color scheme contrast the scene much better:

In "The Search For Spock," Scotty, Sulu, and Chekov have to figure out how to navigate the Klingon Bird of Prey away from Genesis before all hell breaks loose. Luckily, experience was on their side and they figure it out almost immediately. Having worked with Constitution-class ship controls was invaluable.
